Bacon Cheeseburger Pasta

I really enjoyed this dish. Maybe I was really hungry, but I liked it. Again, I got this from one of my favorite recipe blogs, Real Mom Kitchen. Thanks to my great neighbor who loaned me some tomato soup. I swear I had bought some at the store, but couldn't find it. My dear little girl probably stashed it somewhere and I'll find it in a month.

Bacon Cheeseburger Pasta

8 ounces uncooked tube or spiral pasta
1 pound ground beef
6 strips of bacon, diced
1 can condensed tomato soup
1 cup (4 ounces) cheddar cheese, shredded
Barbecue sauce

Cook pasta according to package directions. Meanwhile in a skillet cook beef over medium heat until no longer pink; drain and set aside. In the same skillet, cook bacon until crisp(I do mine in the microwave); remove with slotted spoon to paper towels. Discard drippings. Drain pasta; add to skillet. Add soup, beef, and bacon; heat through. Mix in desired amount of barbecue sauce ( I just do a few shakes of the bottle). Sprinkle with cheese; cover and cook until the cheese is melted. 4-6 servings"

Incredible Ice Cream Pie

I've had a few requests for the recipe to this yummy creation. I didn't want to keep you all waiting any longer! This is my husband's favorite treat. His mom made it for him when he was growing up. I make it every year for his birthday. If he's lucky I'll make it twice! It calls for Tin Roof Sundae ice cream, but this year I couldn't find it anywhere! I substituted Reese's Peanut Butter ice cream, but I was told it wasn't quite right. So I promised to search some more for the right ice cream. I had to settle for Bunny Tracks. It has the same elements as Tin Roof. It worked much better for the hubby. Honestly you can use whatever ice cream you want, but for hubby, he has to have the right combo.
Incredible Ice Cream Pie
Get your ice cream out to soften while you make crust ans sauce.
Crust:
3 Tablespoons Butter
2-3 Tablespoons Brown Sugar
1/4 Cup Karo Light Corn Syrup
Cook Until Bubbly. Add 2 1/2 cups Rice Krispies. Stir until covered. Press into 8 x 11 1/2 pan (you could use 9x13, but your crust will be really thin). Chill in freezer while you make sauce.
Sauce:
1/4 Cup Peanut Butter
1/4 cup Chocolate Syrup
2 Tablespoons Karo Syrup
Heat and stir until smooth (I double the sauce)
Reserve a small amount for top. Pour the rest over chilled crust. Chill in freezer. When ice cream is softened place and smooth onto crust. Drizzle reserved sauce over the top. FREEZE.
Set out 15 minutes or so before ready to serve to soften and make easier to serve.

Happy 4th of July Goodie Bucket

Look how stinkin' cute these buckets are! I found them in the $1 bin at Target. When I saw them I thought they'd be perfect for a little gift. I put red, white, and blue salt water taffy in them and finished them off with a tag using Blue Ribbon paper and stickease. I also used the stamp set Thoughtful Seasons (one of my most favorite).
