Smore's

Since Smore weather is almost over here in Utah I thought I'd better post this. My Aunt Joan shared this idea with our family many, many years ago. We've been making smore's like this ever since.
Smore's
2 fudge striped cookies
1 large marshmellow

Roast marshmellow over a fire. Take the two cookies and smoosh the warm gooey marshmellow between them. Enjoy.

You can also make these in the microwave. Place marshmellow in microwave. Heat for a few seconds. Remove from microwave and smoosh between two striped cookies.

Lemon Squares

These are my favorite thing to make if I'm asked to bring a dessert to an event. They are super, super easy! Can you see a trend in my cooking? Everything has to be easy! When I take them places they get rave reviews and is one of my most asked for recipes. I originally got this recipe from a neighbor. I belive it came from the 101 things to do with a cake mix recipe book.

Lemon Squares
1 Lemon cake mix (Duncan Hines Lemon Supreme cake mix seems to turn out best)
2 eggs
1/3 cup oil
Preheat oven to 350

In a bowl, mix together, cake mix, eggs, and oil. Mixture will be stiff. Spread the mixture evenly into a greased 9x13 pan (it will look really thin, but it will puff up). Bake 13-15 minutes until slightly golden on top. Cool, then sprinkle powdered sugar over the squares.

Soft Sugar Cookies

I really enjoy a good sugar cookie. To me they have to be soft. An old co-worker used to bring in these fabulous sugar cookies for us to enjoy. I asked her for the recipe and she gave me two different ones. I like them both, so I'll share them both.

Sugar Cookies

1 Cup Sugar
1 cup margarine
1 teaspoon vanilla
2 eggs
3 cups flour
1 teaspoon baking powder
1 teaspoon soda
1/2 cup milk
Mix sugar, margarine, vanilla & eggs in bowl. In separate bowl, mix flour, baking powder, & baking soda. Then alternate milk & flour mixture w/cream mixture. Bake @ 375 for 9 minutes.


Soft Sugar Cookies

3/4 cup shortening or butter (I use butter)
1 cup sugar
2 eggs
1/2 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1/2 tsp salt

Cream together butter & sugar. Add eggs & vanilla to creamed mixture. Add dry ingredients. Bake at 400 degrees for 9 minutes.


I don't usually roll them out and cut shapes because I'm too lazy. I roll into small balls and place on cookie sheets. They make cute little cookies. I buy frosting at the store and let Jonathan decorate with M&M's. This time I was making them for adults, so I thought I'd try to dip them in chocolate. I simply melted chocolate chips in microwave and dipped half the cookie and let dry on wax paper. It worked and was very yummy!

Navajo Tacos

I have loved Navajo Tacos since Frontier Pies (a resturant that used to be in Riverdale). I used to buy my scone dough from Kent's market in Roy, but since I don't have the luxury o being close anymore, I found this recipe on the web.

NAVAJO FRIED BREAD
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. powdered milk
Warm water

Mix flour, baking powder, salt, and powdered milk. Add warm water, one tablespoon at a time until dough is formed. Knead dough until soft but not sticky. Let stand for two hours covered with a damp cloth. Shape or pat into two inch balls. Flatten into circles about eight inches in diameter. Fry dough in one inch of hot grease in a skillet or in a deep fryer. For very crisp bread make dough very thin.


We don't fry our dough, we just put it on a flat pan on the stove and brown it. You can top your scone with chili, sour cream, cheese, tomatoes, lettuce. Pretty much anything you'd put on a taco.

Broccoli Out Of This World Salad

And that it is! I LOVE this salad! I got this recipe from my Sister-in-law, June. She sent me a recipe binder when Josh and I got married. This recipe was in there and I've loved it from first bite. It's a crowd pleaser too. I usually make it, eat a little bowl, then take it to the event just in case I don't get any before it's gobbled up. This recipe makes a medium sized bowl, so for a larger group I would for sure double it.

Broccoli Out Of This World Salad
1 Head of Broccoli, chopped ( I usually do extra)
10 Bacon cooked and crumbled
2 green onions
4 mushrooms, sliced (I don't add these)
1 cup water chestnuts, sliced
1/2 cup raisins (or craisins work too)
1/2 cup walnuts or Almonds
1/2 cup red onion


Dressing:
1 cup mayonnaise
1/4 cup sugar
2 Tblsp Rice Vinegar

Combine broccoli, bacon, onions, chestnuts and raisins in a bowl. Add mayonnaise, vinegar and sugar in a separate bowl and mix. Pour dressing over the broccoli mixture. Let sit in refrigerator for 3 to 4 hours before serving OR put dressing on just before you serve.
