A Family Classic- Michelle's Lasagna

Growing up my sister Michelle always made this when it was her turn to cook. Yes, we all took turns cooking one night a week. It's very easy, yummy, and not to bad in the health department.

Michelle's Lasagna
1 lb. lean ground beef
1 medium onion chopped (or flakes)
1 package of spaghetti mix
2 cups canned tomatoes (chopped/blended)
1 6oz. tomato paste or tomato sauce
1 cup water
Cheese Mixture:
1 egg beaten
1 tbsp Parsley Flakes
2 tbsp Parmesan cheese
2 cups cottage cheese
1 cup mozzarella cheese
8 lasagna noodles
Brown meat, add onion until cooked. Drain grease. Mix in seasoning, tomatoes, and water. Simmer while mixing cheese mixture together. In a separate bowl mix egg, cottage cheese, parsley flakes, and Parmesan cheese. In a 9x13 pan layer a little bit of meat mixture (about 4 large spoonfuls). Layer 4 noodles on top of meat. Layer half of cheese mixture on top of that. Repeat. Put the remaining meat mixture on top. Cover with foil and cook at 350 for 50-60 minutes. When done pull out of the oven and add mozzarella cheese on top. Let sit while cheese melts.
Serves 12.
