Everyone Needs A Buddy...How About A Muddy Buddy!

This is another childhood favorite. My mom would get out the huge Tupperware bowl and we'd make Muddy Buddies. I made these for a neighborhood get together. I was surprised of how many people didn't know what these little pieces of joy were! Everyone loves a Muddy Buddy, and how can you not? A chocolaty, peanut butter, sugary, crunch in every bite!
9 cups chex mix cereal (any variety)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Into large bowl, measure cereal; set aside. In a quart microwavable bowl, stir together chocolate chips, peanut butter, and butter. Microwave uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable plastic bag. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

If you're trying to be healthy, this probably shouldn't be your first choice to snack on, but an occasional treat would be okay. For one serving (1/2 cup) it has a 3 point Weight Watcher value.

  1. Nate's been begging me to make these but I've been lazy about finding a recipe. Now I guess I don't have an excuse! ;)
