Hearts For Haiti

All our hearts go out to the victims of the earthquake in Haiti, and like so many of you, CTMH is eager to help. Workshop On The Go Group for February

Healthified Spinach Dip

Need a more healthy choice for your Super Bowl party? This one is great! I've taken it to family events and there has been no leftovers. I have some avid Spinach Dip lovers in my family and even they said it tasted just as good as those in a resturant. This recipe was origanlly from www.eatbetteramerica.com. Great site if you are looking for more healthy recipes. I've served this with tortilla chips and reduced fat ritz crackers.

Healthified Spinach Dip
Prep Time:15 min
Start to Finish:45 min
makes:10 servings (1/4 cup each)
4 cups lightly packed fresh baby spinach leaves (4 oz)
1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
1/4 cup reduced-fat mayonnaise
4 tablespoons shredded Parmesan cheese (1 oz)
1/4cup fat-free (skim) milk
2 cloves garlic, finely chopped
1 teaspoon dried basil leaves
1 can (14 oz) artichoke hearts, drained, chopped
Baguette slices, if desired
Assorted raw vegetables, if desired
1. Heat oven to 350°F. Spray 1-quart shallow glass baking dish or 9-inch glass pie plate with cooking spray.
2. Place spinach in 2-quart microwavable casserole; add 1/4 cup water. Cover; microwave on High 2 minutes. Drain well, pressing spinach with paper towels to remove excess liquid. Chop spinach.
3. In large bowl, beat cream cheese with spoon until smooth. Beat in mayonnaise, 3 tablespoons of the Parmesan cheese, the milk, garlic and basil until well blended. Stir in spinach and artichokes. Spread evenly in baking dish. Sprinkle with remaining tablespoon cheese.
4. Bake 20 to 25 minutes or until thoroughly heated. Serve with baguette slices or raw vegetables.

Sunny Apple Bars

I get the Eat Better America newsletter and in it was this recipe. I was excited because I had the muffin mix in my pantry. It had been there for awhile, so I was more then happy to use it up. I thought these were good, but my 5 year old didn't. It might have been the raisins.

Sunny Apple Bars :
1box (15.3 oz) Fiber One™ apple cinnamon muffin mix
1/2cup canned pumpkin (not pumpkin pie mix) or unsweetened applesauce
1/2cup water
1tablespoon canola or vegetable oil
1/4cup fat-free egg product or 1 egg
1/3cup raisins
1/3cup sunflower nuts
Icing:
1/2cup powdered sugar
2to 3 teaspoons milk
1.Heat oven to 400°F. Spray bottom only of 13x9-inch pan with cooking spray. In medium bowl, stir muffin mix, pumpkin, water, oil and egg just until blended (batter may be lumpy). Stir in raisins; spread in pan. Sprinkle with sunflower nuts.
2.Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
3.In small bowl, mix powdered sugar and enough milk for desired consistency until smooth. Drizzle over bars. Cut into bars."


* Makes 24 bars. I froze them in freezer bags then pulled them out and warm them up in the microwave. They still taste great!*

Terrific Teriyaki Burgers

My mom gave all us kids a cook book for Christmas . I love recipe books! I like to try out new recipes. This one is called Good Food from our Neighborhood. It was compiled by a group in Roy. This particular recipe is from Susan Voorhees. We tried it and loved it, I then suggested it to my sister and they really liked it. My brother and his wife tried it too, and well, these burgers are Terrific! (sorry no picture, but try it anyway)

Terrific Teriyaki Burgers

1 1/2 C soft bread crumbs
1/2 C chopped Onion
1/4 C Water
2 Tbsp Sugar
1 Tbsp Soy Sauce
1 Clove garlic, minced (I used a few shakes of garlic powder)
Dash ground ginger
1 1/2 lbs lean ground beef (I used a pound for our family of 4)
6 hamburger buns
Sliced cucumbers (optional)
Lettuce leaves (optional)

Stir together the soft bread crumbs, onion, water, sugar, soy sauce, garlic, and ground ginger in a large mixing bowl. Add the ground beef and mix well. Shape the meat mixture into six 3/4 inch thick patties.


Grill uncovered, turning once, for 15-18 minutes or until an instant-read thermometer inserted into the side of patty registers 160 degrees. (I eye balled it and cooked until no longer pink)


For a gas grill, preheat grill. Reduce heat to medium. Place patties on the grill rack; cover and grill as above. Makes: 6 servings.

What's In A Kit

A challenge was given to me by a neighbor, the Utah Deal Diva. Some of you may know her. She loves a good deal, but don't we all? I was talking to her about the new workshop on the go group starting this month. She, like a lot of you I'm sure, thinks $29.95 for a kit is a little steep. She wanted to know how many things you can make from one kit. Challenge accepted. I created everything the instruction sheets suggested, then using our awesome idea books, Imagine & Originals I started creating more. Here is what I ended up with:
